Spider Enzymes as Food Ingredient
Several food companies and research institutions will conduct studies on the potential use in food of enzymes derived from snakes, spiders and carnivorous plants.

When a spider catches a fly in its web, it injects digestive enzymes into its prey to liquefy it. This makes it easy for the spider to devour the fly. The digestive enzymes are highly effective, so that several food companies and research institutions are very keen on looking into the dynamics of these enzymes.

The group, which consists of Danisco, Novozymes, Aria Foods and research institutions in Denmark, Finland, Poland, Brazil and China, will work on the project for 4 years and then determine the commercial applications of the enzymes.

This article is extracted from April 2010 issue of "FOOD TECHNOLOGY" magazine. Hope this research on spider enzymes can be done soon and spider enzymes can play a vital role and as a new novel food ingredient in food industry field in future.
